  • 120 g salmon fillet
  • 1 cup cook brown rice
  • 0.5 cup shelled edamame
  • 1 cup steamed broccoli
  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • 1 tsp grated ginger
  • 1 clove garlic clove
  • 1 tsp sesame seeds
  • 1 wedge lemon wedge

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Place the salmon fillet on the prepared baking sheet. Drizzle with half the sesame oil and soy sauce. Season with salt and pepper to taste.

In a small bowl, combine the grated ginger and minced garlic (from the garlic clove). Spread this mixture over the top of the salmon fillet.

Sprinkle the sesame seeds over the salmon.

Bake the salmon in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.

While the salmon is baking, heat the remaining sesame oil in a small pan over medium heat. Add the cooked brown rice and shelled edamame, tossing to coat and heat through.

Divide the rice and edamame mixture between serving bowls. Arrange the steamed broccoli and baked salmon on top.

Squeeze a lemon wedge over the salmon and garnish with additional sesame seeds if desired.
