Preheat a pan over medium heat and add 1 tsp of olive oil. Add the turkey slices and cook for about 2-3 minutes on each side until they are heated through and lightly golden. Remove from the pan and set aside.
While the turkey is cooking, peel the carrot sticks and cut them into thin strips. Place them in cold water to keep fresh until serving.
Pit and slice the avocado. Slice the tomato into thin rounds.
Mix Greek yogurt with lemon juice, salt, and black pepper in a small bowl to make a light dressing.
Lay out the whole-grain tortillas. On each tortilla, place 2 lettuce leaves, slices of turkey breast, avocado slices, and tomato rounds evenly.
Drizzle the yogurt dressing over the fillings of each wrap.
Roll each tortilla tightly, starting from one edge, to make a wrap. Slice each wrap in half for easier handling.
Drain the carrot sticks from the water and pat them dry. Serve them on the side with the wraps.
