Fill a large pot with water and bring it to a boil. Add a pinch of salt to the water and cook the pasta according to the package instructions until al dente. Drain and set aside.
Dice the chicken breast into bite-sized pieces. Season with a pinch of salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned and fully cooked, about 6-7 minutes. Remove from the skillet and set aside.
In the same skillet, add the remaining olive oil. Sauté the chopped onions and minced garlic until fragrant, about 2 minutes.
Add diced tomatoes, sliced bell pepper, and a pinch of sugar to the skillet. Stir and let it simmer for about 10 minutes until the tomatoes break down into a sauce.
Return the cooked chicken to the skillet, along with the cooked pasta. Mix everything together until well combined. Cook for another 5 minutes to allow flavors to meld.
Turn off the heat, add butter, and stir until melted. Sprinkle grated Parmesan cheese over the top and season with salt and pepper to taste.
Serve the pasta hot, garnished with additional Parmesan cheese if desired.
