A bright, protein-forward bowl that puts chickpeas center stage: tender chickpeas and flaky tuna are bound with a lemon-garlic Greek yogurt dressing, finished with warm spices and crunchy red onion. The mix delivers satisfying creaminess, bright acidity and contrasting textures — hearty and elegant enough for a restaurant, fast and simple enough for a weekday meal.
Prep and measure: Drain and rinse the canned chickpeas to remove excess sodium and any canning liquid — rinsing improves flavor and texture. Drain the tuna well (press lightly with the back of a spoon) so the bowl isn't watery. Finely mince the garlic and red onion and chop the parsley; measure the yogurt and lemon.
Make the lemon-garlic yogurt dressing: In a small bowl whisk together the Greek yogurt, lemon juice, minced garlic, 1 tsp olive oil (reserve 1 tsp for finishing), ground cumin, smoked paprika and 1/4 tsp salt. Whisking emulsifies the lemon and oil into the yogurt and distributes the spices evenly — this creates a silky coating that clings to chickpeas rather than pooling.
Gently flake the tuna: Use a fork to break the drained tuna into large flakes. Flaking (rather than shredding to bits) preserves pleasant, meaty pieces that contrast with the chickpeas and keep the bowl feeling substantial.
Combine chickpeas and tuna with dressing: In a medium bowl, fold the chickpeas and tuna together with the yogurt dressing. Fold rather than stir vigorously so you combine ingredients without breaking the tuna into tiny pieces — you want distinct flakes mingling with whole chickpeas for texture contrast.
Add aromatics and seasoning: Stir in the minced red onion, chopped parsley, the reserved 1 tsp olive oil, and adjust salt and pepper to taste. The olive oil adds silk and helps carry flavor; the raw red onion gives a bright crunch that offsets the creaminess.
Rest for 5 minutes (optional): Letting the salad sit 5–10 minutes allows the lemon and spices to marry and the chickpeas to absorb flavor — it becomes noticeably more cohesive and flavorful after resting.
Serve: Spoon the mixture onto a bed of mixed greens or serve as-is. Finish with a sprinkle of lemon zest for perfume, a pinch of smoked paprika for color, and an extra grind of black pepper. Serve chilled or at room temperature.
Optional roast for crunch (12 minutes): If you want a restaurant-style textural pop, roast 40 g (about 3 tbsp) of the chickpeas tossed with 1/4 tsp olive oil, a pinch of salt and smoked paprika on a sheet at 425°F (220°C) for 10–12 minutes until crisp — then fold the warm roasted chickpeas into the dressed salad for hot/cold contrast.
