Juicy, golden-seared chicken breasts nestle on a warm, Mediterranean-style ragout of chickpeas, spinach and bursts of cherry tomato, brightened with lemon and fresh parsley. Crisped chicken skin (or a caramelized exterior on skinless breasts) provides savory contrast to the tender, slightly creamy chickpeas; lemon and garlic lift the whole dish into something restaurant-worthy but easy enough for weeknights.
Prep the chicken: Pat chicken breasts dry with paper towels—dry surface = better sear. Season both sides with 1 tsp kosher salt, 1/2 tsp black pepper, smoked paprika and ground cumin. Let sit at room temperature for 10–15 minutes to take the chill off so they cook evenly.
Heat the pan: Place a large heavy skillet (cast-iron is ideal) over medium-high heat and add 2 tablespoons olive oil and 1 tablespoon butter. Heat until the butter foams and the oil shimmers — this hotter fat will give an immediate sear and Maillard color to the chicken.
Sear the chicken: Add the seasoned chicken breasts to the hot pan without crowding. Sear 4–5 minutes on the first side undisturbed until a deep golden crust forms — don’t flip too early or you’ll tear the surface and lose those browned flavors. Flip and cook 3–4 minutes more until the exterior is golden (internal temp will continue to rise during resting). Transfer chicken to a plate and tent with foil.
Build the ragout base: Reduce heat to medium and add the remaining 1 tablespoon olive oil. Add the chopped onion and a pinch of salt; sauté 3–4 minutes until translucent — sweating the onion first extracts sweetness without browning, which keeps the ragout bright. Add the minced garlic and red pepper flakes and cook 30–45 seconds to bloom the garlic’s aromatics (don’t let it burn).
Add chickpeas and tomatoes: Stir in the drained chickpeas and halved cherry tomatoes. Spoon a little pan fond (brown bits) from the chicken into the pan—those bits are flavor gold. Cook 2–3 minutes to warm the chickpeas and soften the tomatoes just enough to release juices.
Deglaze and simmer: Pour in the chicken broth and lemon juice, scraping the bottom of the pan to lift any browned bits. Simmer 2–3 minutes to reduce slightly — the acid brightens the chickpeas and helps create a light pan sauce that will coat the vegetables.
Wilt the spinach and finish: Add the spinach and cook, stirring, until just wilted — about 1–2 minutes. Stir in lemon zest and chopped parsley for immediate fresh aroma. Taste and adjust seasoning with remaining 1/2 tsp kosher salt and remaining 1/2 tsp black pepper.
Return the chicken to the pan: Nestle the seared chicken breasts back into the ragout, spooning sauce over each piece. Reduce heat to low, cover loosely, and cook 4–6 minutes — this finishes the chicken through without drying it and lets the flavors meld. (Use an instant-read thermometer: 165°F / 74°C in the thickest part.)
Rest and serve: Move chicken to a cutting board and rest 5 minutes so juices redistribute. Spoon the chickpea–spinach ragout onto warmed plates, place chicken on top, and finish with an extra squeeze of lemon and a sprinkle of parsley. Resting also allows the internal temperature to even out and produce a juicier bite.
