Juicy, spice-crusted chicken breasts seared to a deep mahogany crust and finished in a bright, buttery lemon-garlic pan sauce. The bold smoky-paprika and cayenne Cajun rub creates a crisp exterior while a quick deglaze with chicken stock, Worcestershire and lemon lifts the fond into a glossy sauce that coats every bite — restaurant quality but entirely doable on a weeknight.
Make the Cajun rub: In a small bowl combine paprika, smoked paprika, garlic powder, onion powder, oregano, thyme, cayenne, kosher salt and black pepper. Mixing the spices ahead ensures even distribution of heat and flavor so every bite is balanced.
Prepare the chicken: Pat the breasts dry with paper towels — removing surface moisture is essential to get a proper sear. If breasts are unevenly thick, butterfly or pound to an even 3/4" thickness for even cooking.
Coat the chicken: Lightly brush both sides of each breast with 1 tablespoon olive oil and press 1–2 tablespoons of the Cajun rub per breast onto both sides, pressing to form a thin crust. The oil helps the rub adhere and bloom the spices when it hits the hot pan.
Heat the pan: Place a heavy skillet (cast-iron preferred) over medium-high heat and add the remaining 1 tablespoon olive oil. Let the pan get very hot — you want it shimmering so the chicken sizzles on contact and forms a deep browned crust (the flavor base for the sauce).
Sear the chicken: Add breasts (don't crowd; work in two batches if needed). Sear without moving for 3–4 minutes until a dark golden-brown crust forms, then flip and sear the other side 3 minutes. Searing at high heat develops Maillard flavors and a textural contrast between crust and tender interior.
Finish in pan to cook through: Reduce heat to medium, add 1 tbsp butter to the pan and spoon melted butter over the breasts for 1–2 minutes to baste. This gentle finish brings the internal temp to 155–160°F (68–71°C) for juicy chicken (carryover heat will bring it to 165°F). If breasts are thick, transfer skillet to a 375°F (190°C) oven for 4–6 minutes instead.
Remove and rest the chicken: Transfer chicken to a plate and tent loosely with foil to rest 5–7 minutes. Resting allows juices to redistribute so they aren’t lost when you slice.
Make the lemon-garlic pan sauce: Keep pan on medium heat and add the diced onion. Sauté 2–3 minutes until translucent to sweeten and pick up browned bits (fond) in the pan — that fond is concentrated flavor. Add minced garlic and sauté 30 seconds until fragrant (don’t burn).
Deglaze and reduce: Pour in chicken broth, Worcestershire sauce, lemon juice and brown sugar, scraping the pan with a wooden spoon to lift the fond. Simmer briskly 3–4 minutes to reduce slightly and concentrate flavor — this turns the liquid into a glossy, savory sauce that clings to the chicken.
Finish the sauce: Off the heat, whisk in the remaining 1 tablespoon butter to enrich and slightly thicken the sauce, then taste and adjust salt/pepper or a squeeze more lemon. Adding butter off-heat (monter au beurre) gives the sauce a silky sheen and rounds the acidity.
Slice and serve: Slice the chicken across the grain into 1/2" slices, spoon sauce over, and garnish with any remaining pan juices. Serve immediately with your choice of sides (rice, roasted vegetables or a simple green salad). Slicing across the grain shortens muscle fibers for a more tender bite.
