In a saucepan, combine 1 1/2 cups of milk and 1/4 cup of sugar. Place over medium heat and stir until the sugar is dissolved, then bring to a simmer.
In a separate bowl, whisk together the cornstarch, egg yolks, salt, and the remaining 1/2 cup of milk until smooth and well combined.
Gradually add the hot milk mixture from the saucepan into the egg mixture, whisking continuously to temper the eggs and prevent them from scrambling.
Pour the combined mixture back into the saucepan and return to medium heat. Stir constantly with a whisk until the mixture thickens and starts to bubble, about 5-7 minutes.
Once thickened, remove from heat and stir in the vanilla extract.
Pour the custard into individual serving dishes or a large bowl. Place a piece of plastic wrap directly onto the surface of the custard to prevent a skin from forming.
Allow the custard to cool to room temperature, then transfer to the refrigerator to chill for at least 30 minutes before serving.
