Peel and dice the butternut squash into small cubes. Set aside.
Cut the chicken breast into bite-sized pieces. Season with a pinch of salt and pepper.
Chop the tomatoes and onion. Mince the garlic cloves.
In a large pot, heat olive oil over medium-high heat. Sauté the chicken pieces until golden brown. Remove from pot and set aside.
In the same pot, add chopped onions and minced garlic. Sauté until the onions are translucent.
Add the diced butternut squash and chopped tomatoes to the pot. Cook for about 5 minutes, stirring occasionally.
Pour in the chicken broth and bring the mixture to a boil.
Reduce the heat to medium-low and add the pasta and thyme. Let the soup simmer for about 15 minutes.
Return the cooked chicken to the pot and continue to simmer until the pasta is cooked to your liking and the squash is tender.
Taste the soup and adjust seasoning with salt and pepper as needed.
Serve hot, topped with grated Parmesan cheese.
