Preheat your oven to 425°F (220°C).
Wash and peel the sweet potato. Cut it into thin sticks to form fries.
In a bowl, toss the sweet potato fries with olive oil, salt, and black pepper until they are well coated.
Spread the fries in a single layer on a baking sheet lined with parchment paper.
Bake the sweet potato fries in the preheated oven for about 25-30 minutes, flipping halfway through, until they are crispy and golden brown.
Meanwhile, slice the avocado and tomato.
Lay the whole-wheat tortilla flat on a clean surface. Place the romaine lettuce leaves in the center of the tortilla.
Layer the sliced turkey breast, cheddar slice, sliced avocado, and sliced tomato on top of the lettuce.
Season the filling with a pinch of salt and pepper.
Roll the tortilla tightly around the filling to form a wrap, and then slice the wrap in half.
Once the sweet potato fries are done, remove them from the oven and let them cool slightly.
Serve the turkey & avocado wrap alongside the baked sweet potato fries.
