Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
Peel and cut the sweet potato into fries, about 1/4 inch thick.
In a bowl, toss the sweet potato fries with 1 teaspoon of olive oil, salt, and pepper until evenly coated.
Spread the sweet potato fries in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, turning halfway through, until golden and crispy.
While the fries are baking, slice the avocado and the tomato.
Lay the whole-wheat tortilla flat and assemble the wrap: place the romaine lettuce leaves in the center, followed by the sliced turkey breast, avocado slices, cheddar slice, and tomato slices.
Season the filling with salt and pepper to taste.
Fold the sides of the tortilla inwards, then roll it up tightly from the bottom to enclose the filling.
Cut the wrap in half diagonally and serve with the baked sweet potato fries.
