Preheat your oven to 200°C (400°F).
In a large bowl, toss the sweet potato wedges with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and a pinch of black pepper.
Spread the sweet potato wedges on a baking sheet lined with parchment paper in a single layer. Roast in the preheated oven for 25-30 minutes or until tender and golden brown, flipping them halfway through.
While the sweet potatoes are roasting, prepare the wraps. Lay the whole-wheat tortillas flat on a clean surface.
Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and spread it evenly over each tortilla.
Layer each tortilla with mixed greens, slices of turkey breast, a slice of cheddar or Swiss cheese, tomato slices, and cucumber slices.
Roll up each tortilla tightly to enclose the filling, wrapping it like a burrito.
Once the sweet potato wedges are done, serve them alongside the wraps on a plate.
Season both the wraps and sweet potato wedges with additional salt and pepper to taste, if desired. Serve warm and enjoy!
