Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook for about 5-7 minutes, breaking it apart with a spoon, until browned.
Add 2 tablespoons of taco seasoning mix to the beef, along with 1/4 cup of water. Stir well to combine and let simmer for an additional 3-4 minutes, or until the mixture thickens. Add salt and pepper to taste.
While the beef is simmering, shred 2 cups of lettuce and grate 1 cup of cheddar cheese if not pre-shredded.
Warm the taco shells according to the package instructions, either in a preheated oven or microwave.
To assemble the tacos, fill each shell with a portion of the seasoned beef. Top with shredded lettuce, cheddar cheese, a dollop of sour cream, and a spoonful of salsa.
