Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat. Add the ground beef to the skillet.
Season the beef with 1/4 teaspoon of salt and 1/8 teaspoon of black pepper, stirring occasionally until it's browned and cooked through, about 5-7 minutes. Remove from heat.
Warm the corn tortillas in another skillet over medium heat for about 30 seconds on each side until they are pliable.
Wash and finely chop the lettuce leaves and set aside. Dice 1/4 of a medium tomato into small cubes.
Grate 30g of cheddar cheese.
Assemble the tacos by spreading an equal amount of cooked beef onto each tortilla, followed by chopped lettuce, diced tomato, and grated cheese.
Serve immediately while warm, optionally with a squeeze of lime juice for extra flavor.
