Falafel Wrap with Tahini & Yogurt Sauce

Ingredients

  • 4 pieces baked falafel balls
  • 1 piece whole-wheat pita or wrap
  • 1 medium tomato
  • 1/2 medium cucumber
  • 1 cup lettuce
  • 2 tbsp tahini-yogurt sauce
  • 1 tsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

Preheat a skillet over medium heat and add 1 tsp of olive oil. This will help give the falafel a crispy exterior.

Add the 4 baked falafel balls to the skillet and cook them for about 2-3 minutes on each side until they are warmed through and slightly crispy on the outside. Remove from heat and set aside.

Slice the tomato into thin slices and peel and slice the cucumber thinly as well.

On a clean surface, lay out the whole-wheat pita or wrap.

Spread the 2 tbsp of tahini-yogurt sauce evenly over the surface of the pita or wrap.

Place the cooked falafel balls along the center of the pita or wrap.

Top the falafel with the sliced tomato, cucumber, and 1 cup of washed and dried lettuce.

Sprinkle with 1/4 tsp salt and 1/4 tsp pepper to enhance the flavors.

Carefully roll the pita or wrap, tucking in the sides as you go to secure the filling.

Serve the wrap immediately, or for a different texture, you can lightly grill the wrap on a skillet for 1-2 minutes on each side to make it slightly crispy.
