Ingredients

  • 8 pieces Falafel
  • 4 pieces Whole-wheat wraps
  • 1 cup Hummus
  • 1 cup Parsley
  • 1/2 cup Bulgur
  • 2 medium Tomato
  • 1 medium Cucumber
  • 1/4 cup Lemon juice
  • 3 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

Prepare the bulgur for the tabbouleh by rinsing it under cold water. In a medium saucepan, combine 1/2 cup bulgur and 1 cup of water. Bring it to a boil, then reduce the heat and cover it. Simmer for about 10-12 minutes, or until the bulgur is tender and the water is absorbed. Allow it to cool.

While the bulgur is cooking, finely chop 1 cup of parsley, 2 medium tomatoes, and 1 medium cucumber. Place these in a large mixing bowl.

Once the bulgur is cooled, add it to the bowl with the parsley, tomato, and cucumber. Add 1/4 cup of lemon juice, 3 tablespoons of olive oil, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to the same bowl. Mix everything together until well combined to form the tabbouleh.

Warm the falafel pieces in the oven or microwave according to the package or your homemade recipe instructions.

Lay out the whole-wheat wraps and spread 2 tablespoons of hummus over each wrap.

Place 2 pieces of warmed falafel in the center of each wrap. Then, add 1/4 cup of tabbouleh over the falafel.

Fold the sides of the wrap over the filling, then roll it up tightly from the bottom. Repeat with the remaining wraps.

Slice the wraps in half if desired, and serve immediately.
