Ingredients

  • 4 pieces smoked sausage dogs
  • 4 pieces hot dog buns
  • 1 medium onion
  • 2 medium sweet bell peppers
  • 2 tablespoons olive oil
  • 2 tablespoons dijon mustard
  • 4 tablespoons mayonnaise
  • to taste N/A salt
  • to taste N/A black pepper

Instructions

Preheat a grill or grill pan over medium-high heat.

Slice the onion and sweet bell peppers into thin strips.

In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and bell peppers. Season with salt and pepper. Sauté for 6-8 minutes until they soften and slightly caramelize. Remove from heat and set aside.

Mix the Dijon mustard and mayonnaise in a small bowl and set aside.

Lightly brush the smoked sausage dogs with 1 tablespoon of olive oil and place them on the grill. Grill for 8-10 minutes, turning occasionally until they are evenly heated and slightly charred.

Open the hot dog buns and place them on the grill for 1-2 minutes to lightly toast them.

Place each smoked sausage dog in a bun. Top with the onion and bell pepper mixture, and drizzle with the mustard-mayo sauce. Serve immediately.
