Ingredients

  • 75 g soba noodles
  • 120 g firm tofu, cubed
  • 1 cup mixed bell peppers and snap peas
  • 1 tbsp soy sauce (low sodium)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 1 tsp sesame seeds
  • 1 tbsp olive oil

Instructions

Bring a pot of water to a boil, and cook the soba noodles according to package instructions, usually about 4-6 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the cubed tofu and cook until all sides are golden brown, about 5-7 minutes. Remove the tofu from the skillet and set aside.

In the same skillet, add the mixed bell peppers and snap peas. Stir-fry for 3-4 minutes until they are vibrant and just tender.

Reduce the heat to medium, add the grated ginger, and stir for 30 seconds until fragrant.

Return the tofu to the skillet, then add the cooked soba noodles. Drizzle with soy sauce, rice vinegar, and sesame oil. Toss everything together gently to combine.

Sprinkle sesame seeds over the top, and season with salt and pepper to taste. Serve warm.
