  • 8 oz firm tofu, drained and pressed
  • 1.5 cups cooked soba noodles
  • 1.5 cups mixed vegetables (bell pepper, carrot, spinach)
  • 1 tbsp sesame oil
  • 1 tbsp low-sodium soy sauce
  • 1 tsp grated ginger
  • 1 tbsp sesame seeds

Instructions

Cut the firm tofu into bite-sized cubes.

Heat the sesame oil in a large non-stick skillet or wok over medium-high heat.

Add the grated ginger to the pan and stir-fry for about 30 seconds until fragrant.

Add the tofu cubes to the pan and stir-fry for about 5-7 minutes until they are golden brown on all sides. Remove the tofu from the pan and set aside.

In the same pan, add the mixed vegetables and stir-fry for 3-4 minutes until they are tender but still crisp.

Add the cooked soba noodles, stir-fried tofu, and soy sauce to the pan with the vegetables. Toss everything together until well combined and heated through.

Season with salt and pepper to taste.

Sprinkle sesame seeds over the dish before serving.
