Ingredients

  • 5 oz firm tofu (pressed)
  • 1 cup mixed stir-fry vegetables (broccoli, bell pepper, carrot)
  • 1 cup cooked soba noodles
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

Preheat your oven to 375°F (190°C). Cut the pressed tofu into 1-inch cubes and toss with 1/2 tablespoon of olive oil, salt, and black pepper to taste.

Place the tofu cubes on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway through, until golden and slightly crispy.

While the tofu is baking, heat the remaining 1/2 tablespoon of olive oil in a pan over medium heat. Add the mixed stir-fry vegetables and stir-fry for about 5-7 minutes until tender-crisp.

Add the cooked soba noodles to the vegetables in the pan and stir to combine. Drizzle with soy sauce and sesame oil, tossing everything to coat evenly.

Once the tofu is done, remove from the oven and gently fold it into the soba noodles and vegetables mix, ensuring the tofu is well distributed.
