Stir-fried Tofu & Mixed Vegetables with Soba Noodles

By Tails

Total: 25 minutes
VegetarianAsianMain Course

Ingredients

  • 8 oz firm tofu, drained and pressed
  • 1.5 cups cooked soba noodles
  • 1.5 cups mixed vegetables (bell pepper, carrot, spinach)
  • 1 tbsp sesame oil
  • 1 tbsp low-sodium soy sauce
  • 1 tsp grated ginger
  • 1 tbsp sesame seeds

Instructions

1

Cut the tofu into small cubes. Pat them dry with a paper towel to remove excess moisture.

2

Heat the sesame oil in a large non-stick skillet or wok over medium-high heat.

3

Add the cubed tofu to the skillet. Stir-fry for about 5-7 minutes, or until the tofu is golden brown on all sides. Remove the tofu from the skillet and set aside.

4

In the same skillet, add the grated ginger and mixed vegetables (bell pepper, carrot, spinach). Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.

5

Return the tofu to the skillet with the vegetables. Add the cooked soba noodles and soy sauce. Toss everything together to combine, and heat through for about 2 minutes.

6

Season with salt and black pepper to taste. Sprinkle with sesame seeds before serving. Toss once more to ensure everything is well coated and evenly distributed.

7

Serve hot immediately, garnished with additional sesame seeds if desired.
