Greek Yogurt Berry Parfait with Granola & Honey

By Jennifer Bridges

Total: 15 minutes
DessertBreakfastHealthy

Ingredients

  • 480 g Greek yogurt (2%)
  • 2 cups Mixed berries (strawberries, blueberries, raspberries)
  • 2/3 cup Granola
  • 2 tbsp Honey
  • 2 tsp Chia seeds (optional)
  • 4 tbsp Water (for chia seeds, optional)

Instructions

1

If using chia seeds, mix 2 teaspoons of chia seeds with 4 tablespoons of water in a small bowl. Let them sit for about 10 minutes until they form a gel-like consistency.

2

In a mixing bowl, gently toss the mixed berries. If the strawberries are large, you may want to slice them into smaller pieces.

3

In two separate serving glasses or bowls, start by layering with Greek yogurt. Add about 120 g of Greek yogurt to each serving dish as the base layer.

4

Add a layer of mixed berries on top of the Greek yogurt in each glass or bowl. Use approximately a half-cup of berries per serving.

5

Drizzle about 1 tablespoon of honey over the berries layer in each serving.

6

If using, add a spoonful of the prepared chia seed gel over the honey layer.

7

Top the parfait with granola, using about 1/3 cup per serving, spreading it evenly over the top to add crunch.

8

Add another 120 g layer of Greek yogurt over the granola in each serving.

9

Finish with a few more berries on top and a final drizzle of honey if desired. Serve immediately.
