Ingredients

  • 2 cups Greek yogurt
  • 1 cup Mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup Granola (low-sugar)
  • 2 tablespoons Honey
  • 1 tablespoon Chia seeds

Instructions

Wash and pat dry the mixed berries. If using strawberries, hull and slice them into halves or quarters if they're large.

In a medium-sized bowl, combine the Greek yogurt with 1 tablespoon of honey. Mix until the honey is well incorporated throughout the yogurt.

In a separate small bowl, mix the chia seeds into 2 tablespoons of water and let them sit for 5 minutes to form a gel-like consistency. This step is optional but adds a nice texture and nutritional boost to the parfait.

Set out two serving glasses or bowls. Begin by adding a layer of honey-yogurt mixture to the bottom of each glass.

Add a layer of mixed berries on top of the yogurt.

Sprinkle a layer of granola over the berries for a nice crunchy texture.

If using chia gel, spoon a small amount over the granola layer.

Repeat the layers until all ingredients are used, finishing with a topping of mixed berries and a drizzle of the remaining tablespoon of honey.
