Ingredients

  • 2 fillets salmon fillets
  • 1 bunch asparagus
  • 2 tbsp olive oil
  • 1 piece lemon
  • 1 tsp salt
  • 0.5 tsp black pepper

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Rinse the asparagus and trim the woody ends. Arrange them in a single layer on one side of the prepared baking sheet.

Drizzle 1 tablespoon of olive oil over the asparagus and sprinkle with 0.5 teaspoon of salt and 0.25 teaspoon of black pepper. Toss to coat evenly.

Place the salmon fillets on the other side of the baking sheet. Drizzle the remaining 1 tablespoon of olive oil over the salmon.

Season the salmon with the remaining 0.5 teaspoon of salt and 0.25 teaspoon of black pepper. Zest the lemon over the salmon for extra flavor.

Slice the lemon in half and squeeze half of the lemon over both the salmon and asparagus.

Place the baking sheet in the preheated oven and roast for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender.

Remove from the oven. Squeeze the remaining half of the lemon over the top before serving for a fresh citrus finish.

Serve immediately, dividing the salmon and asparagus onto two plates. Enjoy your healthy meal!
