A bright, Mediterranean-inspired main salad: smoky, paprika-kissed grilled chicken sits atop a bed of nutty quinoa tossed with crisp cucumber, sweet cherry tomatoes, red onion and fresh parsley. A silky lemon-tahini dressing ties everything together — tangy, creamy and herb-forward — making a light yet satisfying meal that feels restaurant-quality but is easy enough for weeknights.
Prep the chicken and season: Pat the chicken breasts dry (this helps them brown). Rub both sides with 1 tbsp olive oil, 3/4 tsp kosher salt, 1/4 tsp black pepper and 3/4 tsp smoked paprika. Let rest 10 minutes at room temperature while you start the quinoa — a short rest lets the seasoning penetrate and brings the chicken closer to room temperature for even cooking.
Rinse and toast the quinoa: Place 1/2 cup dry quinoa in a fine-mesh sieve and rinse under cold water until the water runs clear (this removes the bitter saponins). Drain well. Heat a small saucepan over medium heat, add the drained quinoa and toast, stirring, 1–2 minutes until it smells nutty — toasting amplifies quinoa’s flavor. This step is optional but recommended for depth.
Cook the quinoa: Add 1 cup water (or low-sodium stock) to the toasted quinoa, bring to a gentle boil, then reduce to a simmer, cover and cook 12–15 minutes until the liquid is absorbed. Turn off the heat and let rest, covered, 5 minutes so the grains steam and separate. Fluff with a fork — fluffing keeps the quinoa light and prevents it from becoming gluey.
Make the lemon-tahini dressing: In a bowl whisk together 2 tbsp tahini, 2 tbsp fresh lemon juice, 1 tbsp olive oil, 1/4 tsp kosher salt and 1/4 tsp freshly ground black pepper. The tahini will seize up initially — whisk vigorously and add 1–3 tbsp warm water, 1 tbsp at a time, until you reach a silky, pourable consistency. Warming and thinning the tahini makes it creamy and prevents bitterness.
Cook the chicken (grill or stovetop): Heat a grill pan or heavy skillet over medium-high heat until very hot — a hot surface gives a quick sear and caramelization (Maillard reaction) for deeper flavor. Add the chicken and cook 4–5 minutes per side (depending on thickness) until a golden crust forms and an instant-read thermometer reads 74°C / 165°F at the thickest point. Sear time locks in juices and creates texture.
Rest and slice the chicken: Transfer the cooked chicken to a cutting board and tent loosely with foil for 5 minutes — resting lets the juices redistribute so the meat stays moist when sliced. Slice thinly against the grain for tender bites.
