Preheat a grill or grill pan over medium-high heat. Season the chicken breasts with salt and black pepper.
Lightly brush the grill with olive oil and grill the chicken breasts for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the grill and let rest.
Slice the grilled chicken into thin strips.
In a large bowl, combine the mixed salad greens, cherry tomatoes (halved), sliced cucumber, cooked quinoa, and crumbled feta cheese.
Add the sliced grilled chicken to the salad mixture.
Drizzle the lemon-tahini dressing over the salad and gently toss everything together until well coated.
Taste and adjust seasoning with more salt and black pepper if needed before serving.
