Wash the potatoes thoroughly and cut them into 1-inch cubes, leaving the skin on for extra texture and flavor.
In a large mixing bowl, combine the cubed potatoes, olive oil, minced garlic, salt, pepper, and rosemary. Mix until all potatoes are evenly coated with the seasoning.
Spread the seasoned potatoes out in a single layer on a baking sheet, ensuring they are not too crowded.
Roast the potatoes in the preheated oven for 25-30 minutes, or until they are fork-tender and golden brown, turning them halfway through cooking for even crisping.
Remove the potatoes from the oven and let them cool slightly before serving. Garnish with additional rosemary if desired.
