In a small saucepan over medium heat, combine 1/2 cup of quick oats with 1 cup of milk. Add a pinch of salt and stir to combine.
Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for about 2-3 minutes, stirring occasionally, until the oats are soft and have absorbed most of the liquid.
While the oats are cooking, peel the banana and slice it into thin rounds.
Once the oatmeal has reached the desired consistency, remove the saucepan from heat and stir in 2 tablespoons of peanut butter until fully combined.
Add the sliced banana and 1/4 teaspoon of ground cinnamon to the oatmeal and gently mix.
Transfer the oatmeal to a serving bowl. Drizzle with 1 tablespoon of honey if using, and sprinkle with a little extra ground cinnamon for garnish if desired.
Serve hot and enjoy your quick oatmeal with banana and peanut butter!
