In a medium saucepan, combine 1 1/2 cups of rolled oats, 3 cups of milk or water, 1 teaspoon of cinnamon, and a pinch of salt. Stir to combine.
Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally to prevent the oats from sticking to the bottom of the pan.
Once boiling, reduce the heat to low and let it simmer for about 5-7 minutes, or until the oats reach your desired consistency. Stir occasionally.
While the oats are cooking, slice the bananas.
When the oats are done, remove them from the heat and stir in 1 1/2 teaspoons of chia seeds. Let it sit for a moment so the chia seeds can absorb some liquid and become gelatinous.
Divide the oatmeal into three bowls.
Top each bowl with 1 tablespoon of peanut butter and 1 sliced banana.
Serve immediately, drizzled with honey or maple syrup if desired.
