Silky, comfort-food oatmeal brightened with ripe banana, nutty peanut butter and crunchy chia seeds. The oats cook in whole milk for a luxuriously creamy texture while mashed banana and cinnamon add natural sweetness and warmth—finished with a swirl of peanut butter for richness and chia for a pleasant pop of texture.
Prep the banana and measure the dry ingredients. Peel the banana and mash it in a small bowl with a fork until mostly smooth (some small chunks are fine). Measure out oats, milk, peanut butter, chia seeds, and cinnamon so everything is at hand — mise en place speeds cooking and prevents overcooking the milk.

Adjust heat so the mixture barely simmers; a vigorous boil makes the oats gummy.
Off the heat, stir in the peanut butter and chia seeds. Peanut butter folded in off heat keeps its flavor bright and prevents it from breaking into oily streaks; stirring the chia seeds in at the end lets them hydrate slightly and remain pleasantly chewy rather than turning fully gelled.
Taste and adjust. If you want the bowl sweeter, add a drizzle of honey or maple syrup (optional). If you prefer a looser texture, stir in 1–2 tablespoons of extra milk. For extra silkiness, stir in 1 teaspoon of butter or a splash of vanilla.
