Ingredients

  • 1 lb boneless chicken breast
  • 2 large bell peppers (red, yellow, or green)
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 medium onion
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 2 tbsp fresh cilantro (optional)

Instructions

Slice the chicken breasts into thin strips. Season them with salt, black pepper, cumin, and paprika.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken strips and cook for about 5-7 minutes, until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil. Add minced garlic and sliced onion. Sauté for 2-3 minutes until fragrant and softened.

Add thinly sliced bell peppers to the skillet. Sauté for another 5 minutes until the peppers are tender but still crisp.

Return the cooked chicken strips to the skillet. Stir everything together and cook for an additional 2 minutes to heat through.

Sprinkle the shredded cheddar cheese evenly over the chicken and peppers. Cover the skillet with a lid and allow the cheese to melt for 2-3 minutes.

Garnish with chopped fresh cilantro if using. Serve hot, enjoying the cheesy, savory goodness of the dish.
