Ingredients

  • 2 pieces chicken breast
  • 1 cup cheddar cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon butter
  • 1 cup chicken broth

Instructions

Slice the chicken breasts into thin cutlets for quicker cooking.

Season the chicken cutlets with salt and black pepper on both sides.

Mince the garlic cloves.

In a large skillet, heat the olive oil over medium-high heat.

Add the chicken cutlets to the skillet and cook for 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.

Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.

Reduce the heat to low, return the chicken cutlets to the skillet, and sprinkle the shredded cheddar cheese evenly over the top.

Cover the skillet and allow the cheese to melt over the chicken, about 3-4 minutes.

Serve the cheesy chicken cutlets hot, garnished with fresh herbs if desired.
