A lush, restaurant-style skillet that layers tender seared chicken and savory sautéed beef over ultra-creamy, butter‑and‑cheese rice. Smoky paprika and cumin lift the meaty flavors while melting cheddar creates a glossy finish — rich, comforting textures with bright finishing notes of parsley and lemon.
Prep the proteins and mise en place: Pat the chicken thighs dry and season both sides with 1 tsp salt, 1/2 tsp black pepper and 1/2 tsp smoked paprika. This ensures even seasoning and removing surface moisture helps achieve a golden sear rather than steaming.
Rinse the rice briefly under cold water until the water runs mostly clear, then drain. Rinsing removes excess surface starch so the finished rice cooks up fluffy and doesn’t glue together.
Warm a large heavy skillet (cast iron or stainless) over medium‑high heat and add 1 tablespoon olive oil. Sear the chicken thighs, skinless side down, for 4–5 minutes per side until deeply golden (internal temp ~74°C / 165°F). Searing at high heat caramelizes surface proteins (Maillard reaction) for flavor; don’t move them too early or they’ll stick instead of developing a crust. Remove chicken to a plate and tent with foil to rest.
Lower heat to medium, add the remaining 1 tablespoon olive oil, then add the ground beef. Break it up with a spatula and season with 1/2 tsp salt, 1/4 tsp black pepper, 1/2 tsp cumin. Cook until browned but still moist, about 5–7 minutes. Browning the beef creates concentrated meaty flavor; leaving a little fond in the pan adds depth for the rice step. Remove beef to a bowl but leave any rendered fat in the pan.
In the same pan, add the butter and let it melt. Add the diced onion and a pinch of salt; sweat until translucent and soft, about 4–5 minutes. Sweating onions in butter draws out sweetness without browning — that base flavor makes the rice silky and aromatic.
Add the minced garlic, remaining smoked paprika (1/2 tsp), remaining cumin (1/2 tsp), dried oregano, and red pepper flakes, and cook for 30–45 seconds to bloom the spices. Toasting spices briefly in fat releases their essential oils and transforms them from sharp to round and aromatic.
Add the rinsed rice to the pan and stir for 1–2 minutes so each grain gets coated in butter and spice. This step toasts the rice slightly and helps keep grains separate after cooking.
Pour in the chicken stock, scrape any brown bits (fond) from the bottom of the pan, and bring to a simmer. Return the cooked beef to the pan, stir to distribute. Bring to a gentle boil, then reduce heat to low and cover tightly. Simmer gently for 15–18 minutes, or until rice is tender and liquid is absorbed. Cooking rice covered at low heat allows the steam to cook grains evenly.
While rice cooks, slice the rested chicken thighs into bite‑size strips across the grain — cutting against the grain keeps the chicken tender. Keep warm.
When rice is done, remove pan from heat and let it stand, covered, for 5 minutes. Resting lets residual steam finish and firms the texture slightly so the cheese will melt evenly.
Uncover and gently fold in the shredded cheddar and the remainder of the butter (if desired for extra gloss), stirring until melted and the rice is creamy. Stirring cheese in off heat prevents oil separation and creates a glossy emulsion with the butter and starches.
Gently fold the sliced chicken into the cheesy rice to warm, then taste and adjust seasoning with salt, pepper and a squeeze of lemon if using — the acid brightens the richness. Finish with chopped parsley and serve immediately.
To plate like a restaurant: spoon a mound of cheesy rice in the center, fan the sliced chicken across the top, and spoon any remaining sautéed beef around the base. Garnish with parsley and an extra grind of black pepper for contrast.
