Preheat your oven to 400°F (200°C).
Wash the potatoes thoroughly and pat them dry. Pierce each potato a few times with a fork.
Rub 1 tablespoon of olive oil over the potatoes, then sprinkle them with half of the salt and pepper. Place the potatoes on a baking sheet and bake for 35-40 minutes or until tender.
While the potatoes are baking, cut the chicken breasts into small, bite-sized pieces.
Dice the bell pepper into small chunks.
Heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken pieces, bell pepper, paprika, garlic powder, onion powder, and the remaining salt and pepper. Cook for 10-12 minutes until the chicken is cooked through and the peppers are tender.
Once the potatoes are baked, remove them from the oven and allow them to cool slightly. Cut them open lengthwise and gently mash the insides with a fork.
Divide the chicken and pepper mixture among the opened potatoes. Top each with equal parts of the cheddar cheese.
Return the stuffed potatoes to the oven for 5 minutes or until the cheese is fully melted.
Serve the cheesy chicken and pepper baked potatoes hot. Enjoy!
