Bright, savory and textural — tender thin-sliced lemon-garlic chicken spiced like shawarma rests on a bed of fluffy quinoa and peppery winter greens. Juicy cherry tomatoes, crisp cucumber, a cooling smear of yogurt, and a dusting of sumac or parsley create a restaurant-quality composed salad that’s fast enough for weeknights but special enough for guests.
Pat the chicken slices dry on paper towels and put them in a shallow bowl. Drying removes surface moisture so the exterior can brown quickly (browning = flavor).
