Bright, hearty and texturally satisfying, this Grilled Lemon-Herb Chicken & Quinoa Salad pairs smoky, lemon-kissed chicken with fluffy, nutty quinoa and crisp summer vegetables. Creamy avocado and a zesty lemon-Dijon dressing tie everything together for a restaurant-quality, protein-forward salad that’s fresh enough for lunch and substantial enough for dinner.
Rinse the quinoa under cold water in a fine mesh strainer for 30–60 seconds to remove the natural saponins that can taste bitter. This keeps the finished quinoa bright, not soapy. Drain well.
