Ingredients

  • 1 cup Labneh (strained yogurt)
  • 4 pieces Small pita breads
  • 2 tablespoons Extra-virgin olive oil
  • 2 tablespoons Za'atar
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 2 pieces Small oranges (or tangerines)
  • 1/4 cup Fresh mint
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

Preheat your oven to 350°F (175°C).

Wash and halve the cherry tomatoes. Slice the cucumber into thin rounds. Peel the oranges or tangerines and separate them into segments.

Place the pita breads on a baking sheet and drizzle with 1 tablespoon of extra-virgin olive oil. Sprinkle 1 tablespoon of za'atar over them. Warm in the preheated oven for about 5-7 minutes, until heated through and slightly crispy.

While the bread is warming, spread the labneh evenly onto a serving plate. Drizzle with the remaining 1 tablespoon of olive oil, and sprinkle the remaining 1 tablespoon of za'atar, salt, and pepper over the top.

Arrange the cherry tomatoes, cucumber slices, and orange segments around the labneh on the serving plate. Scatter the fresh mint leaves on top, if using.

Remove the pitas from the oven. Cut each pita into wedges if desired.

Serve the labneh plate with the warm, za'atar-spiced pita wedges on the side. Enjoy this refreshing breakfast!
