Ingredients

  • 8 slices whole-grain bread
  • 6 oz sliced roasted turkey breast
  • 4 slices bacon or turkey bacon
  • 0.5 medium avocado
  • 2 slices cheddar cheese
  • 2 leaves lettuce
  • 4 slices tomato slices
  • 2 cups mixed greens
  • 2 tbsp vinaigrette
  • 2 tbsp butter or margarine
  • to taste optional salt
  • to taste optional pepper

Instructions

Preheat a skillet over medium heat and cook the bacon until crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Lightly butter one side of each slice of whole-grain bread. Place four slices, buttered side down, on a clean surface.

On each slice of bread, layer 1.5 oz of sliced roasted turkey breast, half a slice of cheddar cheese, half a leaf of lettuce, 1 tomato slice, half a slice of avocado, and 1 slice of cooked bacon.

Top with another slice of buttered bread, buttered side up. Press gently to secure the sandwich.

Heat a skillet over medium heat and grill the sandwiches until the bread is golden brown and the cheese is slightly melted, about 3-4 minutes per side.

While the sandwiches are grilling, prepare the mixed greens salad by tossing 2 cups of mixed greens in 2 tablespoons of vinaigrette. Season with salt and pepper to taste.

Remove the sandwiches from the skillet, cut them in half, and serve each plate with a half sandwich and a side of mixed greens salad.
