Begin by toasting the 9 slices of whole-grain bread in a toaster or oven until golden brown and crisp.
While the bread is toasting, slice the avocados and tomatoes. Peel and pit the avocados before slicing.
Spread 1 tablespoon of mayonnaise on each of three slices of toast. You may substitute with Greek yogurt if preferred.
Layer slices of turkey breast (approximately 4 oz per sandwich) on top of the toasted bread with mayonnaise. Add 2 cooked slices of bacon on top of the turkey.
Place a few slices of avocado and tomato slices on top of the bacon, followed by a leaf of lettuce.
Top each assembly with another slice of toasted bread, then repeat the layering (turkey, bacon, avocado, tomato, lettuce) and cover with the final slice of toasted bread to complete the club sandwiches.
Secure each club sandwich with toothpicks to hold them together to prevent slipping and cut each into halves or quarters.
For the mixed green salad, combine the mixed greens in a large bowl. Drizzle with olive oil and vinegar dressing, and season with salt and pepper to taste. Toss to combine evenly.
Serve the turkey & avocado club sandwiches with a side of mixed green salad on each plate.
