Cook the rice by bringing 2 cups of water to a boil. Add 1 cup of rice, cover, and reduce heat to low. Simmer for 15-20 minutes until rice is tender and water is absorbed. Let it cool slightly.
In a pan, melt 2 tablespoons of butter over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
Add the ground beef to the pan. Cook until browned and cooked through. Season with salt and pepper. Remove from heat and let cool slightly.
In a large bowl, combine the cooked rice, beef mixture, 1 cup of cheese, and 1 egg. Mix well.
Form the mixture into small bite-sized balls. Place on a tray and refrigerate for 15-20 minutes to firm up.
In a small bowl, beat the remaining egg. Place breadcrumbs in a separate plate.
Dip each rice bite into the beaten egg, then roll in breadcrumbs to coat completely.
In a large frying pan, heat 2 tablespoons of oil over medium heat. Fry the rice bites until golden brown on all sides.
Remove from oil and place on paper towels to drain excess oil.
Serve warm as a snack, appetizer, or side dish.
