Preheat your oven to 180°C (350°F).
In a medium-sized pot, add 1 tablespoon of olive oil and heat over medium heat. Add the rice and toast it slightly for 2 minutes. Then add 2 cups of water and a pinch of salt. Bring to a boil, cover with a lid, and reduce the heat to low. Cook for 15 minutes or until the rice is tender and water is absorbed. Remove from heat and set aside.
While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the finely chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.
Add the ground beef to the onion and garlic. Use a spatula to break the meat into smaller pieces. Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Cook until the beef is browned and cooked through, about 8 minutes.
In a large bowl, whisk together the eggs. Add the cooked rice, beef mixture, and half of the cheddar cheese. Stir until well combined.
Transfer the mixture to a greased baking dish. Top with the remaining cheddar cheese.
Bake in the preheated oven for 15-20 minutes until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving.
