Preheat the oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish cut side up.
Finely chop the onion and mince the garlic cloves.
In a large skillet, heat olive oil over medium heat. Add chopped onions and cook until soft, about 5 minutes. Add minced garlic and cook for another minute.
Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon as it cooks.
Stir in the cooked rice, diced tomatoes, salt, and black pepper. Mix well and let it simmer for 5 minutes to allow the flavors to meld.
Stuff each bell pepper with the turkey and rice mixture, pressing down to fill tightly. Place stuffed peppers back into the baking dish.
Cover the baking dish with aluminum foil and bake for 25 minutes.
Remove the foil, sprinkle cheese evenly on top of each pepper, and return to the oven. Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool for a few minutes before serving.
