Ingredients

  • 3 whole Bell peppers
  • 1 lb Ground turkey
  • 1 cup Cooked rice
  • 1 cup Diced tomatoes
  • 1 cup Cheddar cheese
  • 1 tbsp Olive oil
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Italian seasoning

Instructions

Preheat the oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them in a baking dish, cut side up.

In a large skillet, heat olive oil over medium heat. Finely chop the onion and mince the garlic, then add them to the skillet. Sauté until the onion is translucent, about 5 minutes.

Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon, about 8-10 minutes.

Add the cooked rice, diced tomatoes, salt, black pepper, and Italian seasoning to the turkey mixture. Stir well to combine and cook for another 2 minutes. Remove from heat.

Stuff each bell pepper with the turkey and rice mixture, pressing down gently to pack it in.

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

Remove the foil and sprinkle the top of each stuffed pepper with cheddar cheese. Return to the oven and bake until the cheese is melted and bubbly, about 10 minutes more.

Remove from oven and let cool for a few minutes before serving.
