Ingredients

  • 4 large Bell peppers
  • 1 lb Ground turkey
  • 1 cup Cooked rice
  • 1 15 oz can Diced tomatoes
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tbsp Olive oil

Instructions

Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outsides with olive oil and place them in a baking dish, cut side up.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey and cook, stirring, until it's browned and cooked through, about 5-7 minutes. Drain any excess fat.

Add the diced tomatoes (with juice) to the skillet, followed by the cooked rice, cumin, salt, and black pepper. Stir well to combine and let it cook for another 2-3 minutes until heated through.

Carefully spoon the turkey and rice mixture into each bell pepper, packing them tightly. Place any remaining mixture around the peppers in the dish.

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes, allowing the tops to brown slightly.

Remove from the oven and let rest for a few minutes before serving. Enjoy!
