Ingredients

  • 2 pieces bell peppers
  • 140 g lean ground turkey
  • 0.5 cup cooked brown rice
  • 0.5 cup tomato sauce
  • 0.25 pieces onion
  • 1 clove garlic
  • 30 g shredded cheese
  • 1 tbsp olive oil
  • to taste n/a salt
  • to taste n/a black pepper

Instructions

Preheat your oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds and membranes inside. Set the peppers aside.

Finely chop the onion and mince the garlic.

Heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

Add the lean ground turkey to the skillet, breaking it up with a spoon, and cook until it's no longer pink, about 5-7 minutes.

Stir in the cooked brown rice and tomato sauce. Season with salt and black pepper to taste. Mix everything well and let it cook for another 2-3 minutes.

Place the bell peppers in an oven-safe dish, making sure they stand upright. Fill each pepper with the turkey and rice mixture. Press down gently to pack filling tightly.

Sprinkle shredded cheese over the top of each stuffed bell pepper.

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

Remove the foil and continue baking for an additional 5-10 minutes, or until the peppers are tender and the cheese is melted and bubbly.

Remove from the oven and let cool for a few minutes before serving warm.
