Ingredients

  • 2 large bell peppers
  • 200 g tempeh
  • 3/4 cup brown rice
  • 1/2 medium onion
  • 1 clove garlic
  • 1 cup tomato sauce
  • 1 tbsp nutritional yeast
  • 1 tbsp olive oil
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Instructions

Preheat your oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.

Heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic. Cook until the onion becomes translucent.

Add the crumbled tempeh to the pan. Stir and cook for about 5 minutes until slightly browned.

Stir in the cooked brown rice, tomato sauce, nutritional yeast, black pepper, and salt. Mix well and let it simmer for 5 minutes.

Fill each bell pepper with the tempeh and rice mixture, pressing down to ensure they are tightly packed.

Place the stuffed bell peppers in a baking dish. Add a little water to the bottom of the dish to help steam the peppers.

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes to allow the tops to brown slightly.

Remove from the oven and let cool for a few minutes before serving.
