Preheat the oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them in a baking dish.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and minced garlic, sauté for about 3 minutes until the onion is translucent.
Add the ground turkey to the skillet and cook until browned, approximately 5 minutes. Break it into smaller pieces as it cooks.
Stir in the cooked brown rice, tomato sauce, salt, black pepper, and dried oregano. Combine well and let cook for another 2-3 minutes.
Remove the skillet from heat and stir in 1/2 cup of shredded cheese.
Stuff each bell pepper with the turkey and rice mixture. Place the stuffed peppers upright in the baking dish.
Sprinkle the remaining 1/2 cup of shredded cheese over the tops of the stuffed peppers.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 5-10 minutes, until the cheese is melted and golden brown.
Remove from the oven and let cool for a few minutes before serving.
