Preheat the oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish, cut side up.
In a saucepan, bring 2 cups of water to a boil. Add the rice, cover, and simmer for about 15 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
Meanwhile, in a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until the onion is translucent.
Add ground turkey to the skillet and cook until browned. Break the turkey into small pieces as it cooks.
Stir in the diced tomatoes (including the juice), cooked rice, salt, black pepper, and Italian herbs. Let the mixture simmer for 5 minutes, allowing the flavors to meld.
Spoon the turkey mixture evenly into each bell pepper.
Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
Remove the foil, sprinkle cheese over the top of each stuffed pepper, and bake an additional 10 minutes, or until the cheese is melted and bubbly.
Let the stuffed peppers cool for a few minutes before serving. Enjoy your meal!
