Charred poblano peppers stuffed with spiced, juicy shredded chicken and sautéed cauliflower rice — brightened with lime and fresh cilantro. Smoky paprika and cumin deliver warm Mexican flavors while the char on the poblano adds a savory depth; the cauliflower rice keeps the dish light and low-carb without sacrificing texture.
