Smoky ancho-chili-rubbed chicken brightened with lime sits on a bed of fragrant cilantro-lime jasmine rice, topped with a warm black bean & corn salsa that’s lightly spiced and slightly sweet. A quick-pickled red cabbage adds a crunchy, tangy contrast — the result is a balanced, restaurant-quality Tex-Mex bowl that’s vibrant in flavor, texture and color.
Make the quick pickle for the cabbage: in a small bowl combine shredded red cabbage, apple-cider vinegar, sugar and a pinch of salt. Stir to dissolve the sugar and salt — the acid draws moisture from the cabbage and softens it while retaining crunch. Let sit at least 10–15 minutes at room temperature while you prepare the other components (this quickens the process and keeps the cabbage bright).
Prep the chicken and make the ancho-lime marinade: pat the chicken breast dry with paper towels (dry surface = better browning). In a small bowl combine ancho chili powder, ground cumin, minced garlic, lime zest and juice from 1/2 lime, 1 tsp olive oil, 1/4 tsp salt and a generous grind of black pepper. Stir into a paste — the oil and acid help distribute the spices and infuse the chicken. Rub the paste all over the chicken, pressing it into the surface. Let rest 20–30 minutes at room temperature if time allows; the lime juice adds brightness but don’t marinate more than 45 minutes or the acid can start to firm the meat too much.
Cook the jasmine rice: rinse the rice briefly under cold water until water runs mostly clear — this removes excess surface starch and prevents gummy rice. Combine rinsed rice, 3/4 cup water (or low-sodium chicken broth for more flavor) and a pinch of salt in a small saucepan. Bring to a gentle boil, then reduce to the lowest simmer, cover tightly and cook without lifting the lid for 12–14 minutes (this gentle steam cooks the grains evenly). Remove from heat and let rest, covered, for 8 minutes to finish steaming. Fluff with a fork and stir in 1 tbsp chopped cilantro and the remaining squeeze of lime if you like; resting ensures the rice is tender and fluffy rather than sticky.
Prepare the warm black bean & corn salsa: heat a small nonstick skillet over medium heat. Add 1 tsp olive oil and the chopped red onion; sauté 1–2 minutes until the onion softens and its sugars begin to shine — this mellows sharpness and builds base flavor. Add the corn kernels and cook 1–2 minutes to toast lightly (toasting brings out sweetness). Stir in the drained black beans just to warm through (30–45 seconds) — you want them heated but not mushy. Remove from heat and fold in the diced tomato, 1 tbsp lime juice, a pinch of salt and black pepper. Warming concentrates flavors and allows the lime to brighten the mix without breaking down the tomato.
Cook the chicken: heat a ridged grill pan or heavy skillet over medium-high heat until smoking hot — a hot pan gives you quick sear and caramelization which creates deep flavor. If your pan is nonstick you may not need additional oil; otherwise wipe a tiny bit of the marinade across the pan or add a spray of oil (we used the marinade oil in calculations). Place the chicken on the hot surface and cook undisturbed for 3–4 minutes to develop a deep char. Flip and continue cooking 3–4 minutes more until the internal temperature reaches 74°C / 165°F (use an instant-read thermometer inserted into the thickest part). Cooking quickly over high heat seals juices and gives a smoky crust; resting ensures the juices redistribute and the meat remains moist — rest the chicken 5 minutes before slicing thinly against the grain.
Assemble the bowl: spoon the cilantro-lime rice into your bowl as a bed (the warm rice will absorb and balance the salsa juices), arrange several slices of the rested ancho-lime chicken on top, spoon the warm black bean & corn salsa alongside, and add a small mound of the quick-pickled cabbage for tang and crunch. Garnish with extra cilantro leaves, lime wedges and radish slices for brightness and texture. The contrast of smoky-salty chicken, bright citrus, sweet-warm salsa and tangy cabbage is what makes each bite exciting.
