  • 5 slices whole grain bread
  • 3 medium ripe avocados
  • 1 cup cherry tomatoes
  • 1 cup alfalfa sprouts
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

Toast the 5 slices of whole grain bread until they are golden brown and crispy. You can do this using a toaster or under the broiler in your oven.

Cut the 3 ripe avocados in half, remove the pits, and scoop the flesh into a bowl. Use a fork to mash the avocado until smooth. Add 1/2 teaspoon of salt and 1/4 teaspoon of black pepper to taste, then mix well.

Take the 1 cup of cherry tomatoes and slice them in half.

Spread a generous amount of the mashed avocado mixture evenly onto each slice of toasted whole grain bread.

Top the avocado with sliced cherry tomatoes, distributing them evenly across all slices.
